leave the joists open and box them out with this so they are somewhat recessed but can still hide all the pipes and guts

check out the pinball machines!! :-) The bar stools look okay without the backs on them, but Al may not like them. If no brass footrest is installed at the bar, you could slide the stools underneath to make more floor space.
